On paper, comparing the Tormek T-8 and the Tormek T-1 is simple.

The T-8 is Tormek's full-size water-cooled professional sharpening system. The T-1 is the compact home kitchen knife sharpener.

But that does not really answer the question most people are asking:

Which one is right for me?

I own a Tormek T-8. It is a great fit for me because I sharpen a wide range of edged tools. I use it for my spoon carving knives, hatchets, gouges, plane irons, my EDC knives, and periodically my kitchen knives.

A friend in my neighborhood is an avid home cook. They love cooking, but they are not interested in the intricacies of hand sharpening on stones. They also do not have chisels, hatchets, gouges, carving knives, and plane irons to maintain. They want sharp kitchen knives with a process that is simple enough to use regularly. So they got themselves a Tormek T-1. 

Choose the Tormek T-8 if you want a versatile sharpening system for knives and tools.

Choose the Tormek T-1 if you mainly want a simple, compact way to keep kitchen knives sharp.

Why I Use the Tormek T-8

The Tormek T-8 makes sense for me because my sharpening needs are not limited to one type of edge.

I sharpen pocket knives and outdoor fixed blades. I sharpen spoon carving knives. I sharpen my hatchets. I sharpen gouges. I sharpen plane irons. I also sometimes remember to sharpen my kitchen knives. 

The T-8 is a full sharpening system. With the right jigs, it can handle pretty much anything you need to sharpen. That makes it especially useful if you are a woodworker, carver, turner, serious knife owner, or someone who likes having one machine that can grow with your sharpening needs.

The T-8 gives you room to expand. You might start with just kitchen knives and chisels, then later add jigs for turning tools, carving tools, scissors, or axes. You don't need to use every part of the system on day one. But if your sharpening needs grow, the T-8 can grow with you.

That is the main reason I like it.

The T-8 Is for More Than Just Knives

If you only need to sharpen kitchen knives, the T-8 may be more machine than you need.

But if you sharpen knives plus tools, the T-8 is a great choice

The T-8 can sharpen:

  • Kitchen knives

  • Pocket knives

  • Hunting knives

  • Whittling knives

  • Chisels

  • Plane irons

  • Gouges

  • Turning tools

  • Carving tools

  • Hatchets and axes

  • Scissors

  • And more, with the right setup

If you have a shop, a carving bench, a tool collection, or a mix of knives and tools that need regular maintenance, the T-8 is usually the better long-term choice.

The T-8 Has a Learning Curve

The T-8 is not difficult in the sense that it is confusing to use, but it is a real sharpening system. There is more to learn than there is with the T-1.

You will need to understand how to mount the tool in the jig correctly, set the angle, use the jig with the correct motion, shape the bevel for the cutting task, and hone the edge. That learning curve is part of what gives the T-8 its versatility.

For me, that's a benefit. I like being able to adapt the machine to different tools and different edges. But not everyone wants that.

If you mainly want sharp kitchen knives and don't want to think about jigs, edge geometry, or building out a sharpening system over time, the T-1 may be a better fit.

Why My Neighbor Uses the Tormek T-1

They care about sharp knives because they cook often, but they're not interested in going deep down the rabbit hole of sharpening.

They are not interested in learning the intricacies of sharpening by hand on stones. They don't have a collection of tools to maintain. They want their kitchen knives to be sharp, and they want the process to be simple enough that they can do it quickly and easily, so they can get back to what they really enjoy: cooking. 

That's exactly why the Tormek T-1 makes sense for them.

The T-1 is compact, easy to use, and designed specifically for kitchen knives. It gives you more angle control than many other home electric sharpeners, and it doesn't ask you to become a sharpening expert.

My neighbor also likes how it looks. They have the Zinc Grey and matches their other kitchen appliances, so it doesn't look out of place sitting on their countertop. A sharpener that lives in a drawer or cupboard is easier to ignore. A sharpener that sits out next to where you cook is more likely to get used. For my neighbor, that is part of the appeal.

The T-1 fits into the kitchen instead of feeling like a workshop tool brought into the kitchen.

The T-1 Is for Kitchen Knives

The T-1 is not trying to be a more compact T-8. It's a different machine for a different person.

Choose the T-1 if you mainly sharpen:

  • Chef’s knives

  • Paring knives

  • Santokus

  • Nakiris

  • Utility knives

  • Other straight-edged kitchen knives

If your sharpening life is centered around the kitchen, the T-1 is the more practical choice. It is simpler, smaller, and focused on the job you actually need it to do.

Is the T-1 Better Than the T-8 for Kitchen Knives?

Depends on what you mean by "better".

The T-8 can sharpen kitchen knives very well. If you already own a T-8, you can definitely get your knives as sharp as you want on it. But filling the trough with water, mounting the knife in a jig, setting the angle with the AngleMaster or Knife Angle Setter all takes a lot more time than the T-1's system of setting the angle, turning on the machine and just sharpening. 

Both systems will get your kitchen knives sharp, but from a cold start, the T-1 is going to be a lot quicker. Plus, not many people are going to want a T-8 sitting on their ktichen countertops. 

Think of it this way:

The T-8 is the better all-around sharpening system.

The T-1 is the simpler kitchen knife sharpener.

If you want one machine for knives, tools, and future sharpening needs, choose the T-8.

If you want sharp kitchen knives without turning sharpening into a larger hobby, choose the T-1.

The Bottom Line

The Tormek T-8 and Tormek T-1 are both excellent machines, but they are not interchangeable.

The T-8 is right for me because I sharpen a broad range of knives and tools. I want the versatility of a sharpening system that can handle my EDC knives, carving knives, hatchets, gouges, plane irons, and kitchen knives.

The T-1 is right for my neighbor because they care about cooking. They want sharp kitchen knives, a simple process, and a machine that fits into their kitchen in a way that means they will actually use it.

If you sharpen kitchen knives only, look closely at the T-1.

If you sharpen knives plus tools, the T-8 is probably the better long-term choice.
