Sharpening Stones
Sharpening stones, also known as whetstones, are abrasive surfaces that you sharpen your knife on. You can sharpen almost any kind of knife using sharpening stones, and they are a proven option for sharpening. having been used for thousands of years, across cultures.
To sharpen effectively with stones, you will have to learn how to hold your knife so that it is at the correct angle while you move it along the stone’s surface. It is easy to learn the basics. With good instruction, a complete beginner can pick up the techniques in their first sharpening session. Progressing from ‘good’ to ‘great’ will take a little longer, and chasing the ultimate edge is often what turns sharpening from a means to an end into a hobby for a lot of people.
There are two main types of sharpening stones that we recommend for beginners: water stones and diamond stones.
If you’re looking for an option with the widest range grits that provides the best feedback during sharpening, we recommend water stones.
If you’re looking for an option that is low maintenance and will sharpen any kind of knife quickly, we recommend diamond stones.
Water Stones
Water stones are the classic sharpening option, with the widest range of grits, and the best feedback (how they feel) during sharpening.
Water stones are abrasives held together by a binder. As you sharpen, the binder gradually wears away, exposing fresh abrasives. They are called water stones because they require water to rinse away the metal and loose abrasives created during sharpening. Some water stones need to be fully submerged until they are saturated with water, known as soaking stones. Splash-and-go water stones only need water to be applied to the surface for them to be ready for sharpening.
Water stones are available in a huge range of grits, from very coarse 120 grit, all the way up to extremely fine 30,000 grit water stones. For beginners, we recommend starting with just three grits. A coarse stone (220 – 500 grit), a medium stone (600 – 2000 grit) and a fine stone (3000 – 5000 grit). This setup will fit the needs of most people, and you can always add coarser or finer grits later, if you find yourself needing them.
We recommend water stones if you want to a traditional sharpening setup that feels great during use, or you need access to very fine grits for a high level of polish.

Due to water stones continually exposing fresh abrasives during sharpening, the surface of a water stone will wear down over time. Eventually it will become concave, ‘dishing out’. This is easily fixed with a flattening stone or lapping plate, but it does mean that water stones require a little more maintenance that our other option, diamond stones.
Diamond Stones
Diamond stones are the lowest-maintenance way to start sharpening.
Diamond stones are metal plates with a layer of industrial diamonds electroplated to their surface. Since diamond is the hardest known material, it will quickly sharpen the steel of any knife you might own. The metal plate ensures that the abrasive surface remains flat throughout the lifetime of the sharpener.
Diamond stones are available in a wide enough range of grits to meet the needs of most sharpeners, but they will have fewer grit options than water stones. Diamond stones will also wear down in a different way to water stones. Diamond stones will stand up to years of sharpening, but overtime they will sharpen more slowly as the diamonds wear down.
Diamond stones can be used dry, but we recommend keeping the surface wet with water to help remove metal filings left behind by sharpening your knives. Aside from cleaning them every so often, diamond stones are very low maintenance.

Guided Sharpeners
Guided sharpeners are the easiest way to get consistently sharp knives with very little learning curve.
