The Japanese Knife Sharpening Guide is designed for kitchen knives. This is the easiest-to-use knife guide we have found. Just clip it to the back of your knife and it provides a guide for sharpening. The part that rides on your stone is made of ceramic for longer wear.
This guide lifts the back of your knife to provide the angle for sharpening. Because it lifts the back a fixed amount, we only recommend it for traditional kitchen cutlery with a blade height of more than 3/4". On pocket knifes or fillet knives, the angle created is too great.
Angle Calculator* | |
---|---|
Knife Width | Angle |
1 7/16" | 15 Degrees |
1 1/4" | 17 Degrees |
1 1/8" | 20 Degrees |
7/8" | 25 Degrees |
3/4" | 30 Degrees |
* This angle calculator table is based on our research and testing of the Japanese Knife Sharpening Guide. Because the back is fixed, the width of your knife determines the sharpening angle. We suggest only using knives between 3/4" and 1 7/16" in width. The width of the knife is measured from the spine to the edge of the knife.
Q. What if my knife isn't recommended for this guide? Do you have another guide to suggest?
A. The DMT Knife Guide is adjustable. We recommend it if your knife width doesn't give you the desired angle using this not adjustable guide.
Q. How do you use this knife sharpening guide?
A. We created a page that shows you exactly how to use the sharpening guide.
