This isn't just an update; it's a complete reimagining, designed in collaboration with the legendary knife maker Ken Onion himself.
What's New with the Work Sharp Ken Onion Mk. 2?
The Ken Onion Edition Mk.2 sharpener boasts several key upgrades that make it stand out from its predecessor and other sharpeners on the market. Here’s a closer look at what makes this benchtop knife sharpener a must-have for your sharpening arsenal:
Digital Speed Control
One of the most significant enhancements is the new digital speed control. The Ken Onion Edition Mk.2 features a digital display with seven speed levels, ranging from 1 to 7. Levels 1 to 3 are ideal for pocket knives, while levels 4 to 7 are perfect for heavier tools like axes and lawnmower blades. This precise control ensures that you can tailor the sharpening process to your specific needs, whether you’re fine-tuning a delicate blade or restoring a well-used tool.
Precision Angle Adjustment
Sharpening at the correct angle is crucial for achieving a perfect edge. The Ken Onion Edition Mk.2 allows for precise sharpening angle adjustments from 15 to 30 degrees, with each click representing a half-degree increment. This feature, combined with the new leather-lined guides, ensures that your blade maintains the correct position without getting scratched.
Enhanced Blade Grinding Attachment
The Ken Onion Edition Mk.2 is also available with an updated Blade Grinding Attachment, offering greater versatility and control. The attachment features dual reference plates, allowing for better stability and more accurate grinding. It also includes an adjustable pulley system for different convex grinds, making it suitable for a variety of blade types and sharpening needs. With the Blade Grinding Attachment you can adjust your sharpening angle from 10° to 35° while the belt is running.
Easy to Use, Even for Beginners
Despite its advanced features, the Ken Onion Mk.2 is designed to be user-friendly. The guided sharpening system takes the guesswork out of maintaining your knives. Simply place the blade in the guide, power on the sharpener, and pull the knife through at a steady pace. The built-in controls and guides ensure consistent results every time.
With the Blade Grinding Attachment you get a sharpening solution similar to those used by professional bladesmiths, but in a more compact and affordable package.
Step-by-Step Sharpening Process
Using the Sharpening Cassette
-
Place the Blade in the Guide:
With the power off, insert the blade into the right side of the guide, all the way to the heel of the edge. Use light pressure to position the blade.
-
Power On and Pull the Knife:
Squeeze the power switch and pull the blade steadily through the guide at about one inch per second. Keep the cutting edge perpendicular to the belt.
-
Repeat and Feel for Burr:
Continue sharpening on the right side, checking for a burr every 2-3 strokes. Once a burr forms, switch sides and repeat. Use finer grit belts with alternating strokes to refine the edge.
Using the Blade Grinding Attachment
-
Adjust the Settings
With the blade grinding attachment you decide how much convexity you create with the 3 pulley positions. Set your angle anywhere from 10° to 35°. It is recommended to secure the Ken Onion to your workbench, allowing you to use both your hands during sharpening.
-
Set Reference
Set your knife or tool flat on the flat reference plate to ensure the correct sharpening angle. While keeping the blade flat, bring the knife up to the section of the belt between the two top pulleys.
-
Sharpen
Guide the blade across the belt at a rate of 1 inch per second, stopping the knife tip in the middle. Keep the cutting edge perpendicular to the belt's travel for consistent results. Sharpen the same side until a burr forms along the entire edge, counting the strokes. Repeat the same number of strokes on the other side. Continue sharpening with finer grits until the desired sharpness is reached.
A Tool for Every Sharpening Need
The versatility of the Ken Onion Mk.2 doesn’t stop at knives. Its robust design and powerful motor make it suitable for a wide range of tools, from garden shears to axes. The blade grinding attachment further extends its capabilities, allowing for more advanced sharpening tasks and custom edge creations.
Customizable Sharpening
The Ken OnionEdition Elite Mk.2 allows users to customize the sharpening process to fit their specific needs. The adjustable pulley system lets you control the amount of convexity in the edge, making it suitable for everything from pocket knives to heavy-duty tools. Whether you need a flatter grind for kitchen knives or a robust convex edge for outdoor gear, the Ken Onion Mk.2 has you covered.
