The square profile steel has four surfaces: two are the more aggressive Standard Cut, and two are the finishing grade Fine cut. The Standard Cut is aggressive enough to restore an edge. The Fine Cut hones to a fine slicing edge. This two-in-one steel is perfect for maintaining working edges on working knives.

2K Handle

This steel features F. Dick's distinctive two color 2K handle. These ergonomic handles have protective finger guards and are specially designed to be slip proof even when wet or greasy. These handles are hygenic, safe and meant for professional environments.

Standard and Fine

This steel has two distinct sets of groves and is classified as both a Standard and a Fine Steel.

Standard Cut Steels have relatively heavy grooves and work well to restore an edge on a dull knife. Standard Steels leave a toothy edge that will cut well, but may have a bit of a sawing action. They can be used as stand-alone steels, or as a coarser lead-in to Fine Steels. 

Fine Cut Steels work well to maintain a fine slicing edge on a slightly dull knife, but will not be an efficient choice to take a damaged knife back to a cutting edge. Fine Steels are used where a more refined, less toothy edge is required for finer slicing. They can be used alone or after a Standard Steel to continue the sharpening process.
