Quickly and easily create extremely sharp edges on all your knives, from kitchen to hunting knives
Recommended by cutlery experts and professional chefs, the Chef's Choice EdgeSelect 120 Electric Knife Sharpener by EdgeCraft allows you to sharpen both straight and serrated knives. The three-stage sharpener uses two precision diamond sharpening/honing stages with 100% diamond-coated disks and one final polishing/stropping stage to give your knives an incredibly sharp edge. Built-in springs hold the knife blade securely against the angle guides, eliminating the guesswork and guaranteeing a properly sharpened knife.
The Chef's Choice 120 sharpens knives to a 20-degree angle. This angle is designed for most American and European-style kitchen knives.
Stage 1 - A coarse stage using 100% diamond abrasives. For repairing damaged blades or restoring especially dull ones.
Stage 2 - A medium stage, also using 100% diamond abrasives. It refines and sharpens the edge.
Stage 3 - A fine stage using a revolutionary flexible stropping disk. It polishes the edge to hair-splitting sharpness.
The machine is easy to clean and maintain. No honing oils or water is required. Three-year limited warranty. Sharpener measures 9-1/2" x 4" x 4". Engineered and assembled in the USA.

Q. Are there any tips for using a Chef’s Choice Electric Knife Sharpener?
A. Chef’s Choice Sharpeners are easy to use, however, the tips below along with the instruction manual will provide you with everything you need to know to operate the sharpener. A) Unless you have special blades designed to be sharpened primarily on one side (such as Japanese Kataba blades), you should sharpen equally on both sides of your knife. You can do this by alternating the strokes through the left and right slots of each stage. B) Never operate the sharpener from the backside. C) Use just enough downward pressure to ensure uniform and consistent contact of the blade with the abrasive disks on each stroke.
