Water stones remove steel quickly, making sharpening efficient. Water stones have perhaps the widest grit selection of any sharpening stone type, ranging from very coarse stones for edge repair to ultra-fine polishing stones. Most water stones only require soaking or splashing with water—no messy oils needed.
