Water stones and diamond stones are the most popular, but if you want to learn the advantages of each, we recommend you read our article Difference in Sharpening Stone Materials.
A larger stone is generally better. So a 8” or larger stone is generally recommended. A larger stone is easier to use and will help you sharpen more quickly. The reason for smaller stones is usually cost or portability.
