The Dick 12" Oval Profile, Polished Steel is designed to keep the smoothest possible edge on knives when the finest slicing is required. Part of F. Dick's premium Dickoron line, the Dick Polish is an impressive steel that combines maximum usefulness with good looks. The oval shape provides maximum contact with the blade for fast results. The polished steel has no abrasion. It smooths and straightens the edge. This steel is meant to be used lightly and often, while working, before you notice any loss of cutting ability in your knife.
All F. Dick steels are designed by professionals for professionals. This is a tool that is meant to be used in a demanding kitchen, and to look good doing it. It features a large, comfortable handle with an ample guard to keep hands protected, a sturdy ring in the handle provides a convenient means of storage, and the 12" length is suitable for any knife.
And F. Dick has been around even longer than that. Johann Friedrich Dick founded the company in 1778 to manufacture files. They began making sharpening steels in 1873, and have been producing the finest quality steels in Germany as a family owned business ever since. They are rightfully proud of their manufacturing process. The cuts on each steel are made using files also produced by F. Dick. The steels are hardened to 66HRc, surface coated for lasting corrosion protection, and handles are permanently mounted. Each steel is quality checked and stamped "F. DICK Made in Germany". You can be assured that you are getting time-tested quality when you purchase these steels.
This is a Polished Steel. It will work well to maintain a fine slicing edge on a slightly dull knife, but will not be an efficient choice to take a damaged knife back to a cutting edge. Polished Steels are used in situations where a more refined, smooth slicing edge is required. They can be used alone or after a Fine Steel to continue the sharpening process.
