The Trade Cut Steel has a coarse grind that quickly creates a sharp edge. This is the same tool as the Sheffield Made Trade Cut Steel, but with a beautiful rosewood handle, and it is available in an additional length option, the 8" version, which will fit in many knife blocks. This handsome steel is suitable for quickly maintaining a sharp cutting edge on kitchen cutlery. For best results, the Trade Cut Steel should be used lightly and often to maintain knives in the best cutting condition.
We classify this as a Standard Steel. Standard Steels have relatively heavy grooves and work well to restore an edge on a dull knife. Standard Steels leave a toothy edge that will cut well, but may have a bit of a sawing action. They can be used as stand-alone steels, or as a coarser lead-in to Fine Steels.
