Fine Steels

Fine Steels consist of a very hard steel rod with fine grooves cut into it, mounted on a handle. They sharpen in two ways: the hard steel rod pushes the edge of the knife into an apex and the grooves in the rod remove steel from the blade in a file-like cutting action. Fine Steels are similar to Standard Steels but with finer grooves. They are less aggressive and leave a finer edge. Fine Steels are useful for restoring slightly dull knives and tend to leave a cutting edge with a hint of tooth.
