We've found the Chef's Choice line of Hybrid Sharpeners to be a great value in electric sharpeners because they combine electric sharpening stages along with a manual honing stage. However, not all are created equal. We've found sharpeners with the CrissCross technology offer a superior cutting edge. Based on this, we prefer the Chef's Choice Models 220, 270 and 290.
Best Inexpensive Sharpener: The Chef's Choice Model 220 is the least expensive model with the CrissCross Technology.
Best Overall Sharpener: The Chef's Choice Model 270 is our personal favorite, it offers a coarse stage, a fine stage and honing stage with the CrissCross Technology.
Best for Japanese and American Knives: The Chef's Choice Model 290 sharpens to both a 15 degree angle for many Japanese style knives, and a 20 degree angle for most American and German knives.
