These 10" x 4" stones sharpen faster allowing you to take longer strokes on your stone. The generous size also allows you to sharpen large items, like plane irons and chef's knives with ease. This is an amazing value for the extra-large DuoSharp stones in all four grits! The next step is the coarse grit which features the 325 mesh (45 micron) diamond grit. The coarse grit is used after the extra coarse to refine the edge or when your edge is just moderately dull.

10" Extra Fine/Fine DMT DuoSharp Diamond Stone - The Extra Fine/Fine stone is used to refine an edge. You can always sharpen a small knife on a big stone, but sharpening a big knife on a small stone is time consuming and frustrating. If you desire a softer feel from the sharpening stone, Shapton suggests a 5-minute soak before use. The large, brick-like shape ensures a long lasting stone and its efficient sharpening has made it a favorite of many. It is coarse enough to put an edge back on a knife that is only a bit dull, and yet fine enough to leave a good cutting edge as well. Whether you are looking for a single stone to maintain your knives, or for a middle grit stone to add to your sharpening tool kit, the Aotoishi has it covered.

2 1/2 Times Thicker

Like other Naniwa stones, the Aotoishi has a foot print of 8-1/4" x 2-3/4" (210mm x 70mm). But unlike all the others, the Aotoishi is 2-1/8" thick (55mm). That's more than 2-1/2 times thicker than the 3/4" (20mm) stones. That extra thickness ensures that this work horse of a stone will be around for a very long time indeed.

A Joy to Use

It's easy to see how the Aotoishi got its nickname, it really is enjoyable to use. It should be soaked prior to use, but it is not as thirsty as many soaking stones and doesn't have to be immersed long. 5 minutes or so is generally plenty to get it saturated and ready to go. This stone has a not-too-hard, not-too-soft feel that gives good feedback when sharpening, and forms a slurry quickly during use. It's standard footprint fits in a stone holder well, but it is massive enough to stay put on its own too, and the extra height provides all the knuckle clearance you could ask for.

Q. Altering the amounts of water and pressure used while sharpening will make the stone more or less aggressive.

Coarser sharpening is achieved by using less water and greater pressure. The garnets in the stone break free and create a slurry when used in this fashion. In the slurry created on a Coticule, the hard garnet particles are able to abrade more deeply as they roll freely on the surface of the stone, resulting in a more aggressive action that will leave a cloudy finish on the metal.

You can achieve an even finer sharpening by reducing the thickness of the slurry and by gradually adding more water and reducing the amount of pressure used. Eventually, the slurry is thinned to the point where only water will be present on the surface of the stone. With fewer garnets rolling freely on the surface of the stone, the individual particles cannot bite as deeply. At this point, using almost no downward pressure on the edge against the stone, the result is a mirror-fine finish on the metal.

Coticule Stones are related to and found alongside Belgian Blue Whetstones. Raw rocks are quarried, then shaped and finished by hand to make usable whetstones. Typically, the quarried rocks are formed into rectangles of standard sizes, however there are always some pieces of raw stone that won't fit into those standard rectangles, but which will make perfectly good whetstones. These oddly shaped stones have their surfaces flattened and their sides evened out in whatever shapes present themselves.

Three Sizes

The exact shapes and sizes of each stone vary, but they are sorted into three groups:

Extra Small - European Size 2 - Approximately 2.5 to 3.5 square inches

Small - European Size 4 - Approximately 4 to 5 square inches

Medium - European Size 7 - Approximately 7.5 to 9 square inches

Coticule Stones

The Random Shape Coticule Whetstones are the same composition as the rectangular Coticule Whestones we offer. Altering the amounts of water and pressure used while sharpening will make the stone more or less aggressive.

Coarser sharpening is achieved by using less water and greater pressure. The garnets in the stone break free and create a slurry when used in this fashion. In the slurry created on a BBW, the hard garnet particles are able to abrade more deeply as they roll freely on the surface of the stone, resulting in a more aggressive action that will leave a cloudy finish on the metal.

Belgian Blue Whetstones are found alongside and are related to Coticule Whetstones. Arkansas Stones are graded not by grit numbers like other types of stone, but by their density and hardness. The less dense, or softer the stone, the coarser it is. The more dense, or harder the stone, the finer it is. The Hard Arkansas is in the middle of the Arkansas stones overall, and is considered a medium fine grit. The Hard Translucent Arkansas stones are the finest of the Arkansas Stones and are considered fine polishing grit.
