12" Length to Hone Any Knife
As a rule of thumb, a steel should be at least as long as your longest knife. You can always sharpen a shorter knife on a longer steel, but it is hard to do a long knife on a short steel. While a 12" steel is generally very practical and will handle almost any knife in your collection.
