This professional two-stage electric knife sharpener by EdgeCraft allows you to sharpen Asian style knives at a 15 degree angle. Stage 1 uses a 100% diamond coated disk and Stage 2 uses a stropping/polishing disk to give your knife and incredibly sharp edge. The advanced precision springs hold the knife blade securely against the angle guides, eliminating the guesswork and guaranteeing a properly sharpened knife of the thinnest to thickest Asian blades.
The Chef's Choice 315S Diamond Sharpener for Asian Knives allows you to quickly and easily put a sharp precision 15 degree edge on double bevel or traditional single bevel Asian knives, sashimi knives and even thick "Deba" style blades. In both Stage 1 and Stage 2 the left and right side of the blade are sharpened separately which allows you to hone and strop each oriental knife correctly. The contemporary Japanese blades and Chinese cleavers should be honed and stropped on both sides of the blade. However, the traditional single bevel Japanese blade such as the sashimi blade must be sharpened and stropped primarily on the front side of the blade which has the very large factory bevel. In addition, you can also use the Chef's Choice 315S to create an Asian-style edge on conventional European or American-style blades.
