Question: Is the Chef’s Choice Electric Sharpener safe for my knives?

Answer: Yes, we have used the Chef's Choice 120, 130 and 320 with great success on many knives (including high end brands such and Wusthof and Henckels). You may have heard that electric sharpeners can be bad for knives. It is true that SOME are bad, we've tried some electric sharpeners which we don't care for, and therefore refuse to stock. We like the Chef's Choice 120, 130 and 320 because we feel they offer a good edge for many different types of knives.

If you still prefer the more traditional methods or have specialty knives such as single bevel Japanese knives, sharpening stones can be used to provide an edge that can be customized to the knife.

Thanks John, I am so glad to be working with people who know their products and how to use them. You have a very informative and well laid out website and I learned a lot. It was a rainy Sunday and I watched every video and read through each article. The information you provided was very helpful in teaching technique and helping me decide what to buy. Also your products are so well thought out, that no matter what stone you prefer (oil, water or diamond), there is a nice package available for a beginner. All of the products you put together each had their own advantages and believe me, each one spent some time in the shopping cart until I made my final decision.
